Ingredients
2 bone-in pork chops (1.5-2 lbs total)
1 tbsp olive oil
1 tsp smoked paprika
1 tsp garlic powder
1 tsp salt
½ tsp black pepper
Smoky Peach Butter:
2 ripe peaches, peeled and diced
2 tbsp unsalted butter
1 tsp smoked paprika
1 tbsp honey
Pinch of salt
Preparation
Rub pork chops with olive oil, smoked paprika, garlic powder, salt, and pepper. Let sit for 20 minutes.
Preheat grill to medium-high (400°F). Grill chops 4-5 minutes per side until internal temp reaches 145°F. Rest 5 minutes.
For peach butter: In a skillet, melt butter over medium heat. Add peaches, smoked paprika, honey, and salt. Cook 8-10 minutes until peaches soften and mixture thickens. Blend or mash slightly.
Serve chops topped with a dollop of smoky peach butter.
